During the fermentation of the organically grown Carricante grapes, particular care was taken to ensure a winemaking process designed to enhance the freshness of the aromas, the delicacy of the colour and the grape variety\u2019s distinctive, vibrant acidity.
This white wine was created to showcase the altitude and distinctive characteristics of Contrada Mille Cocchita, challenging traditional perceptions of the northern slopes of Mount Etna. Following gentle pressing, the must underwent temperature-controlled fermentation to preserve the fruit\u2019s pure and vibrant expression.
The ageing process, lasting approximately 7\u20138 months, took place entirely in stainless steel tanks, a crucial choice to preserve the wine\u2019s vibrant volcanic minerality, distinctive salinity and ageing potential.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
