Vinification
During the production of this ancestral-method wine, particular care was taken in vinifying the Carricante grapes to enhance aromatic freshness and a fine, elegant tannic structure. The process follows traditional artisanal winemaking practices: the must initially ferments at a controlled temperature and is bottled before the sugars have been completely consumed.
Fermentation is thus completed directly in the bottle, where natural yeasts produce fine, vibrant and beautifully integrated bubbles. This spontaneous bottle ageing preserves the authentic character of Carricante, resulting in a distinctly modern effervescence with a profound volcanic identity.
